SQUASH& SILK TOFU soup by #YALAkitchen
INGREDIENTS (for 1 big bowl)
2 cups of Butternut (chopped in small cubes)
1 cup of almond milk
1 cup of silk tofu
1/2 golden onion
2 tbs of olive oil
1/4 tbs of nutmeg
1/4 tbs ginger
1/4 tbs yellow curry
2 tbs mix sprouts
salt & pepper
THE ART:
In a pan saute the sliced onion with the olive oil and all the spices. Add the chopped butternut and cover the pan with a lib and saute for 5 minutes.
Add the almond milk, the salt and pepper. Cover the pan with a lib and cook fo15 minutes.
Use a blender to mix until obtain a creamy soup.
Put the soup in a nice bowl and add the silk tofu chopped in small cubes. If you like a “crunchy” effect, add a pinch of fresh mix sprouts on the top.
