Recipe for SVADHISTHANA.
CARROT LENTIL HUMMUS – Never Lentils were so tasty!
INGREDIENTS (for a bowl of hummus – 4 people)
2 cups of water
3 medium carrots
2 cups of green lentils
1 medium golden onion
4 tbs of olive oil
1 inch of grated fresh ginger
1 tbs of paprika
1 tbs of lemon zest
1 tbs of oregano
1/4 tbs od salt
4 tbs of soy cream
In a small saucepan heat water until boiling.
In a medium saucepan sauté the onion with 2 tbs of olive oil and the oregano until golden.
Add lentils, the carrots chopped in cubes, the lemon zest and reduce heat to low. Saute for 2 minutes. Add the boiling water and simmer until almost all of the liquid has been absorbed, about 20 minutes. In the mealtime mix in a glass the soy cream with the paprika, the remaining olive oil, the grated fresh ginger and the salt.
Add the mixture in the pan and cook for other 5 minutes.
Use a blender to mix until you obtain the texture of a creamy hummus.
