So easy, So DELICIOUS!
Another quick idea from Yala Collective
THE PINKY SOUP (1 big bowl)
1 grated carrot
1 small onion
1/4 cup edamame
1 tablespoon of cinnamon
2 tbs olive oil
Cut the beetroots in small cubes. Boiled the edamame for 10 minutes with a pinch of salt and put aside.
In a pan fried the onion in the 2 tbs of olive oil. When golden add the carrot, the beets and the spices. Sauté for 5 minutes and add 2 cup of hot water. Cook for 25 minutes with a lib.
Mix with a robot until obtain a cream.
Serve in a bowl and add the edamame to decorate.
