Tofu yellow curry

I love to eat yellow curry in the summer! It make me feel full of sun inside ūüėČ

Here another light, fast and easy recipe you can enjoy for lunch or dinner inspiring on the brighting sun to stimulate your third chakra, MANIPURA.

INGREDIENTS: (for 2 people)

  • 3 medium organic carrots
  • 2 medium organic zucchini
  • 200g organic firm tofu
  • 1 small golden onion
  • 2 tbs Yellow curry powder
  • 1 tbs Turmeric (curcuma)
  • 1 tbs Cumin
  • 1 lime
  • Salt
  • 2 tbs extra-virgin oil




Wash the organic vegetable with clear water. Take a side the green skin of the zucchini . With the help of a vegetable slicer, cut separately the onion, the carrots and the skinless zucchini.


Put the cumin and the olive oil in a pan of about 25cm diameter.  Cook under a low flame the onion until it becomes gold. Add the carrots and cook for 5 minutes with a lid.

In the while prepare your spicy mix. Add in a glass 1/2 cup of worm water, the curry, the turmeric and the salt. Mix together until obtain a uniform liquid.

Cut the tofu in small cubes.

After the 5 minutes open the lid, add the zucchini and the tofu and cover everything with your spicy liquid. Mix the vegetables with a wood spoon.

Cook with the lid for other 10 minutes.


In the while cut in nice and small pieces the fresh zucchini skin.  Zest the lime skin to obtain a fresh green zest.

When ready, layout your curry tofu and vegetable in a nice plate, add the juice of the lime, the zest and the green skin zucchini to decorate your dish.

The juice will exalt the taste of the spices and the zucchini will add a nice and fresh green color to your curry!
