INGREDIENTS: (2 small bowls)

– 2 cups of cherry tomatoes
– 1 cups chopped Kale
– 1/2 cup Proud Mix (Mung Beans, Adzuki Beans, Lentils)
– 1 green Lime
– 6 lives of basil
– 2 tbs balsamic vinegar
– 4 slices of avocado
– 2tbs Extra virgen Olive Oil
– Salt



Cut the cherry tomatoes in small pieces.
In a bowl mix the chopped kale with the chopped leaves of basil, the olive oil, the balsamic vinegar and the lime juice. Massage the leaves for some minutes.
Add in the bowl the cherry tomatoes, the avocado cited in small cubes and the fresh proud mix. Salt to taste. Decor with some slices of lime and the basil.
